University of Kentucky researchers working to improve bourbon barrel manufacturing

BREATHITT COUNTY, Ky. (WKYT) - Before bourbon barrels are built, the staves, or slats of wood that make up the barrel, are dried outdoors for several months to even years.

Through this drying process, they can develop checks and cracks that can create problems later on.

In an effort to understand and combat these issues with the staves, researchers at UK are testing emulsion techniques and shade blankets to hopefully prevent degradation and less loss for these companies.

“It means less trimming, less wood that goes to the boiler for fuel to power kilns and electricity, and more going into those barrels,” said Chad Niman, research specialist in the UK Department of Forestry and Natural Resources.

And we’re back...talking about the New York International Spirits Competition, which just released the results of its 2020 judging. As we discussed earlier in the week, the ‘Double Gold’ recipients in the scotch category were largely unexpected. Well, wait until you hear about some of these bourbon victors. Scattered among some very dependable everyday drinking whiskies is a relatively obscure offering out of Charleston, South Carolina.

For those that are just joining us, NYISC differentiates itself from standard competitions in that the tasting panel is comprised entirely of professional buyers. This includes restaurant beverage directors, bartenders, bottleshop owners, etc. Furthermore, the liquids aren’t just judged by category, but price is also taken into consideration. And so there you’ll find some liquids that perhaps wouldn’t have a chance in other forums because you have a modest $20 bottle sized up against a $2000 showstopper. When cost is a factor, you end up with a fairer spectrum of finalists. (Keep an eye out for the New York International Wine Competition, scheduled for mid-September.)

Out of more than 1200 entries this year, hailing from 30 countries around the world, the judges awarded just 42 ‘Double Golds’—the highest honor. Six of those medals were draped around the collar of bourbon bottles. And lucky for us, they’re all reasonably priced and relatively easy to procure. Bonus!

A geographic outlier, this barrel-strength offering is produced and bottled outside of Charleston, South Carolina. There’s a lot going on here. Clove, stewed apples, smoke, and even a touch of leather—all suspended within a pleasantly creamy mouthfeel. Although 95% of America’s native spirit comes from Kentucky, bourbon—and, yes, even great bourbon—can come from anywhere in the US. This particular label serves as a compelling testament to that fact.

National Bourbon Heritage Month

In 2007, the U.S. Senate passed a resolution officially declaring September as “National Bourbon Heritage Month,” celebrating the uniquely American history of the spirit. Since then, Bourbon enthusiasts have come together to appreciate the craftsmanship, history, contributions and achievements made within the Bourbon industry.

The Distilled Spirits Council of the United States (DISCUS) reports that consumer interest in the category has soared in recent years. In 2020, more than 28 million 9-liter cases of American Whiskey were sold in the United States, generating over $4.3 billion in revenue for distillers.

At a time when the domestic market for the category has experienced significant growth, the export market has been severely impacted by an unrelated trade dispute over steel and aluminum between the U.S. and the EU and UK. While progress has been made in other trade disputes impacting distilled spirits on both sides of the Atlantic, American Whiskeys, including Bourbon, now remain the only spirits category with tariffs still in place, putting America’s native spirit at a competitive disadvantage in the EU and UK.

“Since the imposition of retaliatory tariffs in 2018, American Whiskey exports to the UK have decreased by 52 percent and to the EU by 32 percent,” said Chris Swonger, President and CEO of DISCUS. “We are hopeful this tariff issue will be resolved by the end of the year, so that adult consumers in two of our largest export markets can continue to enjoy one of our country’s greatest exports. Especially during Bourbon Heritage Month, we need toasts – not tariffs!”

Swonger added that Bourbon Heritage Month may look different this year with ongoing pandemic restrictions but noted there are ways to still ways to celebrate by supporting bars restaurants and local distillers safely and responsibly.
